As mentioned by @jakebeal, the correct approach is dependent on your citation style. Here is an example of 6th Edition APA Style. Quoting the following post from the official APA style blog, the following rule applies to articles with more than 7 authors. The first six authors are listed; all subsequent authors. The general format below refers to a book with two authors. If you are dealing with two editors instead of two authors, you would simply insert the names of the editors into the place where the authors' names are now, followed by '(Eds.)' without the quotation marks (see the Example). The rest of the format would remain the same. The general format below refers to a book with three or more authors. If you are dealing with a book that has three to five editors instead of authors, you would simply insert the names of the editors into the place where the authors' names are now, followed by '(Eds.)' without the quotation marks (as per the example). You can follow the regular APA Style rules in this case: List the first six authors, insert an ellipsis, and list the last author. Because these lists match, number them 2009a and 2009b in the reference list, and in the text citations all you need to do is cite them as Scherf et al. (2009a) and Scherf et al.
